Record a named variation by removing or adding ingredients and review its own calculated flags.

Describe what changes from the base recipe
A variant is a named change to a dish’s base ingredients. It keeps related versions together while calculating each version from the ingredients that remain or are added.
- Open the dish and choose Edit dish.
- Find Variants and select its Add button.
- Enter a specific Variant name, such as the kitchen’s actual name for the option.
- Under Remove from the base recipe, select ingredients omitted from this variation.
- Use Add a replacement or extra ingredient for products added instead or in addition.
- Read the variant’s calculated allergen summary and choose Save dish.
If the base recipe has no ingredients, the removal list will ask you to add base ingredients first. A variation name alone does not change a recipe or its flags.

Open the saved Dishcard’s Variants section and check each version. A removed ingredient may not be the only source of an allergen: another sauce, compound recipe, replacement, or recorded override can still contribute the same flag.
Variants inherit the base dish’s recorded overrides. Review the reasons and the resulting flags whenever you change the base recipe or its adjustments. Use a separate dish record if the option needs a materially different description or preparation record that cannot be represented clearly as a variation.
Preview the menu card and guest menu to confirm the base dish and variant are distinguishable. Reprint or regenerate downloaded outputs after changes.
Correct or remove an option
To revise an option, return to the dish editor and change its removed or added ingredients. To remove the option, use Remove variant, then save the dish. Leaving the editor without saving does not publish the change.
If a variant still needs review, inspect the ingredient records it uses and the base dish’s completeness. Do not clear flags simply because a name says “without” an ingredient. Record what the kitchen actually makes and keep preparation questions with the kitchen. A variant’s recorded information is not a guarantee that it is suitable for a guest.
