Fix missing or incorrect allergen information

Find the source of the result

Start with the exact dish and variant the team or guest is viewing. Check the restaurant and menu before changing anything. A missing result, an unfinished warning, and an incorrect positive flag are different problems.

A dish with no entered ingredients normally needs ingredients. An ingredient can also need review because not every enabled allergen has been checked, including newly tracked allergens after a settings change. A blank entry is not the same as choosing None after checking the recipe and supplier label.

Open the dish’s ingredients, including compound recipes such as sauces and dressings. A flag may come from a nested ingredient or a dish override rather than the first ingredient you inspect. If you are a Viewer, give the owner or editor the dish name, variant, and observed issue.

Correct the ingredient and affected dishes

  1. Open Ingredients and use Search ingredients or the Needs review filter.
  2. Open the relevant ingredient and choose its edit action. Compare the current recipe and supplier label with each enabled allergen.
  3. Choose None, Contains, or May contain deliberately for each allergen. Do not use Mark remaining allergens as None merely to clear a warning.
  4. For a compound ingredient, check its component ingredients as well as any direct flags. Resolve missing components or recipe errors before saving.
  5. Select Review and save. Read the affected-dish confirmation, then select Save and update dishes when it appears.
  6. Reopen an affected dish and its variants to check the recalculated result. Follow any remaining ingredient review warnings.

When Wheat is recorded and Gluten is tracked, the review can show Wheat also flags Gluten. Resolve the underlying information rather than trying to clear a derived flag independently.

Check overrides, guest filters, and printouts

If the dish still differs from its ingredients, inspect its recorded overrides and reasons. Use the override guide before changing a deliberate dish-level decision. An override is not a substitute for reviewing an incorrect supplier ingredient.

Check the same dish in the web menu and a fresh menu card. Allergen filters exclude Contains, May contain, and unfinished dishes, so a missing filtered result may be the expected consequence of an unresolved review.

Replace old printed cards and saved service PDFs after the correction. Do not treat a matching filter result, None selection, or cleared warning as certification that a dish is allergen-free. The team still needs to confirm current recipes, suppliers, and preparation with guests.
